poultry - intro

I have cooked 4 different species of birds in my kitchen since 2013: chicken, duck, goose and turkey. Those are the four that are available in the local Deming, NM stores, even if only seasonal.

I know there are other birds that can be eaten. They are not included here because I do not have access to them and have not prepared them.
