No need to make it difficult when simple will do just as well. Chicken, pineapple and a few spices are all you need for this deliciously tropical recipe.

Notice the similarities and differences with the Chicken with Fruit recipe. The cooking methods and fruits are interchangeable, but with slightly different outcomes of course.

Keep it dry—drained pineapple only added late in the cooking—for a fairly crisp chicken. Add pineapple juice for a moister oven-baked pot roast.

INGREDIENTS

This is what you need for 4 servings:

  • 1 chicken 4 lb., parted
  • 1 can pineapple slices
  • S&P
  • your favorite spices
    I used paprika and curry
