braised chicken with zucchinis

This is what you do with older hens that are past laying. This is what happens when you don't brown the chicken legs first. Don't waste younger animals on this unless store-bought is all you can get.

This was 100 % boiled. That leg started coming apart already even though it wasn't even fully cooked yet. (Pic6) It is not the nicest presentation or taste—all that flavor is in the soup now—but it is about the only thing to do with those older birds.

I didn't start this as a soup, but I ended it that way when I turned the leftovers into soup, no chicken left at that time. (Pic7)

 

INGREDIENTS

This is what you need for 2 servings:

  • 2 chicken legs
  • 1 onion
  • S&P
  • 3 zucchinis
    I used 2 yellow, 1 green
  • 1 lb. tomatoes
    I used cherry tomatoes from my garden.
  • 1 red bell pepper
    I used some 'sweet heat' peppers from my garden
