Poblano pepper stew and soup

Poblano peppers and tomatoes are a delicious combination.

I harvested yard-long beans firstfruits for the 2020 season this morning and just had to do something with them. The beans were a minor ingredient. The poblano peppers are the dominant flavor here.

King crab was an amazing addition to this recipe, at the same time radically contrasting with stew flavors, and yet also complimenting them. 

INGREDIENTS

This is what you need for 2-3 servings:

  • 2 large poblano peppers
    and 2 sweet mini peppers
  • 1 large onion, coarsely cut
  • 5-6 celery stalks, finely cut
  • 5 yard-long beans
  • S&P, spices of your choice
  • 2 cups melting cheese
    gruyere, parmesan, Chihuahua cheese

b. poblano tomato soup from stew

Any stew can be a soup ...

All it took in this case were a quart of water and 2 lbs. tomatoes. Poblano tomato soup is delicious and the cheese and other ingredients only enhance that.

Since I had so much of it, I also added some of the zucchini stoemp leftovers to help thicken the soup.

INGREDIENTS

This is what you need:

  • poblano stew leftovers
  • water / stock
  • 2 lbs. tomatoes
  • 1 can tomato paste
  • S&P
