onion & cheese meatballs

The source recipe for this one is slightly more elaborate than the Cheesy Meatballs recipe. It puts French Onion Soup inside the meatballs. Since I am a great fan of French onion soup, I thought this was worth trying. I failed. I had trouble fitting the onions inside the meatballs. The meatballs kept leaking and breaking up.

To get around that problem, I simplified the recipe a bit. I rolled the meatballs without the onions—you can still put the cheese inside—and pan-fried them. I then added the caramelized onions and topped it off with a cheese layer before it went in the oven. If you prepare it my way, the onions will be on top and inside the meatballs instead of only inside them. INGREDIENTS

This is what you need for 4 servings:

  • your favorite meatball mix
    or use sausage meat instead
    or use this mixture:
    • 1 lb. ground beef
    • 1 cup bread crumbs
    • 2 eggs
    • 2 tbsp. dry parsley flakes
    • ¼ cup parmesan cheese
    • 1 tbsp. soy/Worcestershire sauce
    • S&P
  • olive oil
  • 3 onions, halved, thinly sliced
  • 2-3 Mozzarella string cheese sticks
  • 1-2 cups mild melting cheese
    e.g. Mozzarella, Chihuahua, asadero ...
  • 1 cup beef stock
    or 1 cup water with beef bouillon
  • 2 tbsp. flour
  • 1 tbsp. dry parsley flakes
  • ½ tsp. dried thyme
  • S&P
