oyster ceviche

As the saying goes: "Better is the enemy of good enough."

Once I got to know ceviche, the lemon and pepper thing didn't cut it anymore for me. This is so much better. It also considerably increases food safety.

I don't use nearly as many vegetables as for Shrimp Ceviche, but the purpose here is only to add extra flavor, not to eat veggies. The place of honor remains firmly with the oysters.


This is what you need for 2 servings:

  • 1 pt. Willapoint oysters
  • 4 limes, juiced
  • 1 tomato
  • ½ celery stalk
  • cilantro
  • 1/4 cup onion, chopped
  • S&P
