Meatballs are easy to make and always popular. If you are already cooking a clear vegetable & meat soup, use some of the broth to cook the meatballs in. These meatballs were made with the same meat mix as the Stuffed Cabbage Rolls.

Be generous with your condiments because most of it will dissolve in the cooking liquid. You can sear the meatballs before boiling to lock some of that flavor inside. The less liquid you use, the stronger the broth will be to make sauce or gravy.

You also don't have to boil the meatballs in plain water. Add meatballs to any vegetable soup to give it extra flavor. Tomato Soup with Meatballs (Pic1) is very popular world wide.

INGREDIENTS

This is what you need for 4 servings:

  • 1 lb. ground meat beef + pork mix
    or your favorite sausage meat
  • 2 cups onion / bell pepper mix
  • 2 eggs
  • S&P
  • condiments of your choice (e.g. hot sauce, …)
  • ½ bunch fresh parsley optional:
  • 1 cup long grain rice, cooked
    or bread crumbs
  • 1 tbsp. soy or Worcestershire sauce
