zucchini soup with paprika


This is a continuation of the Zucchinis with Paprika Syrup recipe, but can easily be made from scratch. The method is the same as Cream of Zucchini Soup, but the paprika gives it a very different flavor.

This summer soup has a lightly sweet flavor which makes it suitable as a chilled dessert soup or a warm soup for all occasions.


This is what you need for 4 servings:

  • 4 medium zucchinis, sliced
  • 1-2 tbsp. paprika powder
    OR 4 red bell peppers, cleaned & chopped fine
  • 1 tbsp. olive oil
  • S&P
