I like onions when they are cooked, not so much when raw. Onion soup is my all-time favorite. And like I have demonstrated time and again, it's a small step from there to turn the soup into a sauce.

a. onion wine sauce

INGREDIENTS

This is what you need for 2 servings:

  • 1 large onion, chopped small
  •  olive oil
  • S&P
  • 2 cups of sweet red wine

optional:

  • sugar

b. onion confiture (with zucchinis)

This is a very nice sauce. It combines well with a variety of meats and vegetables.

It starts like the recipe above, but takes it further, much further until the liquid is nearly all gone and the sauce becomes sticky like a syrup.

The zucchinis are optional. Onions are the original base for this recipe. To avoid overcooking the zucchinis, wait to add them until the sauce has been almost completely reduced.

INGREDIENTS

This is what you need for 2 servings:

  • 1 large onions, chopped small
  • 1 tbsp. each butter and olive oil
  • 2 tbsp. sugar
  • 1 cup of sweet red wine

optional:

  • 2 tbsp. balsamic vinegar
    or lemon / lime juice
