egg drop potato soup


This is depression era cooking, making the most with very little.

Speaking of extreme recycling, now you no longer have an excuse to throw away that potato water. :-) You can do the same with pasta or rice water. Same thing, different flavor.


This is what you need for 4 servings:

  • 2 qt. potato cooking water
  • up to 1 medium boiled potato
  • 1 or 2 eggs to taste
  • S&P
  • optional:
    • 2 tbsp. semolina
    • additional spices
