onion soup with lettuce


Onion soup is one of my all-time favorites, a frequent flyer. But when I have enough for several days, I change it a bit that 2nd day, so I won't have to eat exactly the same again. The spring lettuce mix has some spinach in it, but is still noticeably different than onion soup with spinach only.

On day one, I made traditional French onion soup , prepared with 2 large sweet onions for 2 quarts. On day two, I added spring lettuce mix for a different, 'darker' flavor accent. Both are delicious. The pictures tell the story.


This is what you need for 2-4 servings:

  • 2 large sweet Texas onions
  • S&P
  • beef bouillon / stock
  • 1/4 - 1/2 lb. spring lettuce mix
