carrot soup with sweet peas


This is very similar to the Sweet Pea Soup recipe, but the amounts are reversed and that changes the flavor emphasis towards the carrots. I often use the peas & carrot combination for my soups.

This soup also has sausages, even though they're not in the picture.


This is what you need for 4 servings:

  • 1 ½ lbs. carrots, sliced, diced
  • ½ lb. sweet peas, frozen
  • sausage of your choice
  • S&P
  • optional:
    • ½ lb. Brussels sprouts
