breakfast waffles (beslagwafels)

My mom used to make these at home. I started experimenting about a week ago, with little success. Then I asked my mother for her recipe and this time they came out much better. Still need my mama after all these years.

I'm having some trouble finding the right amount to fill the waffle maker completely (Pic3) without the dough leaking out everywhere, but that should get better with more practice.

These US waffle makers don't work properly. To make good waffles, you need an iron that you can flip, and I don't mean those little round ones. I got rid of this one, after I bought a 'Croquade'  Belgian waffle iron.

This recipe is intended for immediate consumption. These waffles don’t keep very well.

INGREDIENTS

This is what you need for 2 dz. waffles:

  • 2 lbs. all-purpose flour
  • 2 tbsp. vanilla sugar
    or 2 tbsp. sugar & 1 tsp. vanilla extract
  • 1 tsp. salt
  • 2 packages dry yeast
  • 8-10 eggs
  • 2 qts. milk optional half water or buttermilk
  • 1 lb. butter.
