American pancakes

American pancakes are made with baking soda, which makes the pancakes fluff up when cooked. They usually are considerably thicker but smaller in diameter than Belgian and French pancakes.

Marielos likes these. I prefer the Belgian of French pancakes.

INGREDIENTS

This is what you need for 2+ servings:

2 cups of pancake mix
water

Whisk pancake mix with water until you get a smooth lump-free batter.
Don't over-mix. It destroys the baking soda.
Scoop a small ladle on the hot pan.
Use the bottom of the ladle to quickly spread the batter in a spiral pattern.
Fry over medium heat for 3-4 minutes, until the top goes mostly matte instead of shiny and the bottom starts to color nicely.
Turn the pancakes and fry another 3-4 minutes until fully cooked through.

Serve with syrup, jam or other sweetness.
Enjoy.
Leftovers can be refrigerated for another day.
