stir-fry veggie grillers

These meals were prepared with the 'veggie grillers' from Walmart, 23-oz. trays with coarsely-cut onion, bell peppers, zucchinis and mushrooms on a stick.

These are all favorite vegetables for us, and not having to buy everything separately and cutting it all up was a good argument for the higher price. However, I found that the onions and bell peppers wouldn't cook enough to my liking when on skewers, so I de-skewered them and stir-fried instead.

a. NY Strip steak with stir-fry veggie grillers

NY Strip steak, T-bone and ribeye were not cuts I ever bought before the Covid-19 pandemic. They used to be double the price of a good chuck roast or top round London broil., but those cheaper cuts more than doubled in price at Peppers, while Walmart didn't sell them at all. Because Peppers didn't offer online ordering and curb-side pickup, I started buying at Walmart for safety reasons. Yeah, these cuts are tender enough as steaks, but I don't like that up to 1/3 of them is pure fat. :-(

INGREDIENTS

This is what you need for 2-3 servings:

  • 1 thick NY strip steak
  • 1 23-oz. pckg. veggie grillers
  • olive oil
  • S&P
  • rice (7-grains-mix)

b. T-bone steak with BBQ veggie grillers

The very same vegetables as the recipe above (minus rice,) but with a sauce this time.
I served tem with T-bone steak this time, same oven-grilled as above, but shorter time because this steak was only half the thickness of the one above.

INGREDIENTS

This is what you need for 2 servings:

  • 1-1 1/2 lb. T-bone steak
  • 1 23-oz. pckg. veggie grillers
  • BBQ- or other sauce of your choice
  • olive oil
  • S&P
