Spanish rice


Spanish rice, also known as Mexican rice, red rice, or arroz rojo, is a Mexican side dish or an ingredient in other dishes made from white rice, tomatoes, garlic, onions, etc. It is traditionally made by sautéing the rice in a skillet with oil or fat until it is colored golden brown. Water or chicken broth is then added, along with tomatoes in the form of chopped tomatoes, tomato powder or tomato sauce.

It is known as Persian tomato rice in Europe. 


This is what you need for 2 servings:

  •  1 cup white rice
  • 2-3 roma tomatoes
  • 1 tbsp. tomato powder
    or 1 small can tomato paste
  • 1/2 onion, chopped
  • 1 green bell pepper, chopped
  • S&P
  • seasoning of your choice
    I used Creole seasoning and tomato powder


  • vermicelli / fideo pasta,
    broken into small pieces
