baked potatoes

This is not something I make very often. When I do, I buy these extra-big 'baking' potatoes.

I prefer to cook them without foil and at lower temperature, to get less of that tough layer under the skin.

This is what you need for 2 servings:

Pic3: melting butter

Wash the potatoes to remove dirt.
Add S&P to taste.
Optional:
- Cut a slit in the top of each potato, place slices of butter in it.
- Wrap in aluminum foil.
Bake at 225 ºF for 60-75 minutes or at 350 ºF for 30-40 minutes.
Remove from the oven. Allow to cool enough for safe handling.
Remove the foil.
If it wasn't done before:
- Cut a slit in the top of each potato, place slices of butter in it. (Pic3)
- Add freshly minced parsley.
Serve and enjoy.

Shepherd's pie is a layered casserole. The top layer is made with potatoes, usually mashed potatoes.
