okra in tomato sauce

This is a classic okra recipe. I kept it simple, but feel free to add other vegetables.

Celery and bell peppers make it lean towards a Cajun kitchen.
If you like it hot, add peppers or chile with extra heat.

IMPORTANT:
Discard okra pods that 'crunch' when being cut.
Those woody fibers do not disappear with cooking, and they are very unpleasant in the mouth.

INGREDIENTS

This is what you need for 4-8 servings:

  • 1 lb. fresh okra
  • 2 lbs. tomatoes
  • 1 large yellow onion
  • S&P

optional:

  • celery
  • bell peppers
  • hot peppers / hot sauce
