Eggplant is fairly easy to grow in your home garden or even in containers. And once you get it going, the harvest from a single plant is enough for a weekly meal for two. 

Harvest the fruit before it loses its shine. When they turn matte, the seeds are beginning to ripen and they can stick between the teeth. It is more pleasant eating when the seeds are still soft and undeveloped.

Allow at least one fruit to fully ripen on the vine to harvest seeds for the next growing season.
