sautéed eggplant with sausages


Don't be afraid of frying the eggplant dark brown.  

Eggplant needs to be harvested while still shiny. When it loses its shine, that means it has started making seeds and the fruit will acquire a bitter taste. This one was clearly past its prime with all the seeds, but still good to eat if you don’t mind some bitter. Caramelization will make it sweeter.

Eggplant needs to be cut just before cooking; otherwise it will turn brown like an apple.  


This is what you need for 2 servings:

  • 1 medium eggplant fruit
  • S&P
  • olive oil
  • sausages for 2
