carrots & celery


Very different from the sweeter combinations. Celery can give a sharper flavor that some people may not like if it dominates.

The carrots and celery in pictures 3+4 may be overstewed to your liking. I added them early in the stew because I like the flavor exchanges that creates. If you prefer them crisp, add them late in the stew or prepare separately as described below.


This is what you need for 2 servings:

  • 1 lb. carrots, peeled, sliced
  • 4 celery stalks
  • 1/2 onion, chopped fine
  • olive oil
  • S&P
