A very frequent flyer in the Mexican kitchen, somewhat less in our home. Marielos usually makes this. She made this one today.

INGREDIENTS

This is what you need for 3-4 servings:

  • 1 lb. cooked beans
  • melting cheese of your choice
    I used Chihuahua cheese
  • S&P
  • olive oil

Canned beans are an easy alternative if you don't want to spend the time cooking the beans first. I find them drier than freshly-cooked beans, but we keep them in the house, just in case.

Canned beans are easier and quicker to prepare than dry beans and are imo not as flavorful, often a bit sour-tasting. I like to add extra cheese to counter that.
