This method allows you to make pasta sauce without having to be at the stove the whole time.

  • 1 lb. ground beef, 75-80%
  • 1 large onion
  • 1 each yellow/red/green bell pepper
  • S&P
  • garlic, parsley, ….
  • chipotle
  • 1 qt. tomato sauce
    = 4-6 lbs. fresh tomatoes, stewed-down
  • about half of the sauce
  • water / stock
  • S&P
  • heavy cream
  • vegetables of choice. I used:
    • 1/2 lb. green beans
    • 1 lb. ‘oriental stir fry mix
    • ½ lb. green chile

B. pasta sauce soup

I made more sauce and pasta than we would eat with the two of us, with the intent of turning the leftovers into a hearty meal soup. The conversion is very easy: add water, extra meat & veggies and adjust the seasoning.

If you want to make this from scratch, use only half the ingredients listed for the sauce.

The added vegetables make the outcome very different from the pasta sauce I started with. I did prepare the soup stovetop, so it would go fast. Combine everything in a large pot, bring to a boil, reduce heat, cover and simmer for 30 minutes.
