Mole de rancho

When you prepare this sauce, make a whole pot at once and freeze leftovers for later. It will save you a lot of time. This sauce also has chocolate in it, but is very different from mole poblano or the Dona Maria mole poblano. Recipes vary quite a bit.

 

INGREDIENTS

This is what you need for 2 quarts:

  • 10 cups chicken / beef stock
  • 1/2 lb.  guajillo chili peppers
  • 1/2 lb.  ancho chili peppers
  • 1/2 lb.  pasilla chili peppers
  • 4-8 oz. dark chocolate
  • 1 bread roll
  • 1-2 tortillas
  • 2 tsp. ground cinnamon
  • 1/2 tsp.ground cloves
  • S&P
