tartar sauce

Tartar sauce is another of the classic sauces of the French cuisine. It is a mayonnaise variation that is loaded with extras. Commercial tartar sauce uses thickeners to stabilize the emulsion and prevent separation.

Tartar sauce is best known as accompaniment for Steak Tartare and fish dishes.


This is what you need for 4 servings:

the mayo:

  • 1 egg yolk
  • 1 tsp. vinegar
  • 1 tsp. mustard
  • ½ cup neutral oil
  • S&P

the extras:

  • 2 hard-boiled egg yolks
  • 4 gherkins
  • 3 tbsp. chopped capers
  • 1 shallot
  • 2 tarragon leaves chopped
  • 1 tbsp. chopped parsley
  • 2 stalks chopped chervil
