INGREDIENTS

This is what you need for 1-2 servings:

  • 2-3 eggs
  • 1/2 cup onion & bell pepper mix, sliced
  • scalloped potatoes, cooked
  • 1/4 cup Chihuahua cheese
  • 1/2 cup green chile, fully cooked
  • S&P, hot sauce
