a. bacon and eggs scramble


This is probably the biggest egg scramble I ever made for the 2 of us, with 6 eggs.
Our dog got her share, so it ended up being for 3. :-)

This one came out a bit drier than I had intended, because I didn't reduce the heat quickly enough.


This is what you need for 2-3 servings:

  • 6 strips bacon meat
  • 6 eggs

b. bacon, cheese & marmalade scramble


The ingredient combination—eggs, bacon, chees and marmalade (or jam)—is a guaranteed success, especially when served on tortillas.

This is what you need for 2 servings:

  • 3 eggs
  • ham, thick-sliced x3, chopped small
  • 1 cup melting cheese, grated
  • S&P
  • marmalade / jam of your choice
    I used guayava


  • Sauté the chopped bacon over high heat until crisp. Remove and reserve.
    Discard excess grease.
  • Reduce heat.
  • Pour the eggs in the pan.
  • Stir briefly to get the scrambled curds.
  • Cover and simmer over low heat until nearly done.
    The surface should still be wet.
  • Add the bacon, grated cheese and a few tsp. marmalade.
  • Cover and leave the pan with the heat switched off .
    The remaining heat in the pan should melt the cheese.
  • Serve immediately when done. Enjoy.
