loaded omelet scramble

The idea was good, the execution less so.

This started out as an omelet until I tried flipping it over. Most of it went up and over, but some of it kept sticking to the pan. It ended up a thick omelet pancake, a bit like a Mexican-inspired Egg Foo Young.

It was delicious.

I used an 8” frying pan for this. That is just the right size for 2 eggs for the three of us (me, myself and I.) 

For 3 eggs with payload, a larger pan would be better. Fold instead of flip, unless you're confident you can pull it off. Make sure the entire omelet freely slides in the pan before GO.

INGREDIENTS

This is what you need for 2 servings:

  • 3 eggs
  • 1 cup chopped onion / bell pepper mix
  • 2 slices of ham, chopped small
  • ½ cup gruyere cheese, chopped small
  • pepper (no salt)
  • olive oil
  • optional:
  • 1 cup cooked potatoes, cubed small
  • paprika
  • hot peppers
    fresh, powdered, sauce
