egg salad


Now that we have all those hard-boiled eggs, we need to do something with them. Egg salad makes a nice spread on toast or a sandwich. It can also be served as a cold meal dish.

I used to make this regularly while I had chickens in my backyard. It was a very nice way to get rid of some of the surplus eggs.


This is what you need for 4 servings:

  • 8 eggs, hard-boiled, peeled
  • ½ cup mayonnaise
  • optional:
    • 1 tsp. mustard
  • S&P
