Eggs Benedict are 2 poached eggs served on the two halves of an English muffin with back bacon or ham; and topped with hollandaise sauce. This is a very popular item at brunches.
I have ordered and eaten eggs benedict, but I've never made them at home. I didn't like poaching eggs before I bought that nifty little poaching pan, but I have poached eggs both in and over water. I have made Hollandaise sauce, but not at the same time that I felt like poaching eggs. I doubt I'll will ever prepare the two at the same time. I just don't care enough for eggs Benedict to bother making them. :-)
