Eggs Benedict are 2 poached eggs served on the two halves of an English muffin with back bacon or ham; and topped with hollandaise sauce. This is a very popular item at brunches.

I have ordered and eaten eggs benedict, but I've never made them at home. I didn't like poaching eggs before I bought that nifty little poaching pan, but I have poached eggs both in and over water.  I have made Hollandaise sauce, but not at the same time that I felt like poaching eggs. I doubt I'll that the two will ever happen at the same time at home. :-)

INGREDIENTS

This is what you need per serving:

  • 1 biscuit
  • 2 eggs
  • 2 slices back bacon
  • S&P
  • Hollandaise sauce
