puffed eggs


These look so nice. I had never heard of this before. I just had to try this! It really isn’t that difficult. This is sugarless meringue and it bakes up crunchy in the same way.

This is what you need for 2-4 servings:

  • 4 eggs
  • a small pinch of salt


  • 1 tsp Tartar Powder
    stabilizes beaten egg whites
  • ¼ cup grated cheddar


  • Preheat oven to 350 ºF.
  • Separate the egg whites from the yolks.
  • Set aside yolks without breaking them.
  • Pour egg whites in a degreased bowl.
  • Add a pinch of salt and optional tartar.
  • Beat on low until throughout with bubbles; then beat on high until stiff peaks form.
  • Optionally:
  • carefully fold in the grated cheddar.
  • Spoon the mixture into four piles on a buttered cookie sheet or foil. (Pic2)
  • Depress the center with a spoon to make a pocket for the egg yolk.
  • For hard-cooked yolk, carefully pour a yolk into each center now.
  • Bake for 5 minutes.
  • For softer yolk, add the yolk now.
  • Bake 7 more minutes. (10 minutes total)
  • Serve immediately.
