bacon, bread, hash browns

All three use the same method. Bake in a muffin mold or ramekins. Be inventive. Find other things to bake eggs in.

INGREDIENTS

This is what you need for 2 servings:

  • 4 eggs
  • olive oil
  • S&P
  • your choice of:
    • bacon strips
    • bread slices
    • 2 cups hash browns
      + 1 tbsp. olive oil
      + 1/4 cup grated melting cheese
  • other seasoning
  • garnish

Directions

  • Cook the bacon first.
    Don't crisp it. It needs to be folded in the muffin mold.
  • Mix hash browns with grated cheese.
  • Oil / grease the mold for easy removal.
  • Wrap bacon, bread, or hash browns and cheese around the inside of each muffin cup.
    Let something stick out. It looks more like a nest that way.
  • Prebake hash browns at 425 ºF for 10-15 minutes until the edges start browning.
    Remove and allow to cool.
  • Drop an egg in the cup.
  • Season to taste.
  • Bake at 350 ºF 10-15 minutes until the egg whites set.
  • Remove from the oven. Let cool enough for safe handling.
  • Remove each nest from the cup.
  • Serve immediately.
