baked avocado eggs

This very simple idea is outright genius in its originality. It remains equally good for breakfast as for breakfast-for-dinner. This works best with large-seeded avocados and smaller eggs. I usually make this when I find some really nice large avocados in the store.

Don't be afraid to cook it slower and let the avocado get cooked as well. It may seem a bit strange at first, but quite nice once you get the feel of it.

I like the egg white cooked solid, but the yolk still soft. Marielos prefers it cooked hard. The former may be a bit tricky, somewhere between 8 and 12 minutes under the broiler, depending on the size. The latter is easy: 15 full minutes and watch that it doesn't burn.

INGREDIENTS

This is what you need for 2 servings:

  • .1 extra large ripe avocado
  • 2 eggs
  • S&P
  • ¼ cup milk or cream

optional:

  • other sauces of your choice
  • ham, bacon, ...
