In 2018 I was able to buy a case of whole walleye online. I was happy until I noticed after these two sessions that there was a freshness problem with some of the fish. I dumped the remainder of the shipment. :-(

pan-fried walleye


Walleye is a smallish fish with delicate white meat. Handle with care when fully cooked, that it doesn't fall apart.


This is what you need for 2 servings:

  • 2 whole walleye
  • S&P
  • butter

B. oven-baked walleye


I stuffed these walleye with chopped candied ginger and au Julienne vegetables, seasoned this generously with Old Bay seasoning, baked it for 20 minutes at 400 ºF. This produced a very crisp skin on both sides that peeled back easily after serving. Again, when walleye is ready, it should be easy to pull the whole spine after removing the top half of the meat.
