oven-baked rainbow trout fillets

Most farm-raised rainbow trout has greyish-white flesh. These have the red flesh of wild trout because they have been fed the same diet. These are very nice fillets, considerably larger than the whole trout I occasionally buy here in town.


This is what you need for 2 servings:

  • 2 rainbow trout fillets, thawed
  • S&P
  • Old Bay spices
