stuffed almond trout


Trout, it is a wonderful gift from Mother Nature on a camping trip in the wild with pristine waters. Unfortunately, most people will have to do with farmed trout.

This is the first trout I ever bought here in Deming, NM. I went a little overboard. The stuffing is nice an d all that, but it also masks the natural flavor of the fish.


This is what you need for 2 servings:

  • 2 large whole trout
  • olive oil or butter
  • S&P
  • red potatoes for 2
  • 2 lime
  • ½ cup of shaved almonds
  • Optional:
    • 1 small jar of capers
    • a few pickled mild peppers
    • candied or fresh ginger, chopped or grated
    • 2 sprigs of rosemary
    • 3 stalks of celery parsley
