swordfish with potato zucchini boats

Last time I went to Las Cruces, I bought more fish than we could reasonably eat in a week, so I had to refreeze some of it.

INGREDIENTS

This is what you need for 2 servings:

  • 2 swordfish steaks
  • mashed potatoes
  • 1 large zucchini, halved lengthwise
  • 4 roma tomatoes
  • cabbage from soup
