Two very similar recipes for the fish, but served with different side dishes.

a. with sweet potato, Caribbean rice

A quick and easy side dish, Zatarain's prepackaged Caribbean rice. I made this one a bit wetter than usual, because I wanted some sauce for the fish.

Caribbean rice is easy to make from scratch with bell peppers, coconut and pineapple.

INGREDIENTS

This is what you need for 2 servings:

  • 2 large swai fillets
  • S&P, seasoning
  • 1 pckg. Caribbean rice OR
    • 1 cup rice
    • 1 red, 1 green bell pepper
    • 1 medium onion, cut coarsely
    • 2 celery stalks.
    • 1 small can pineapple chunks, drained

b. with mango and tomatoes

A very different look, this recipe. The tomatoes provide a sharper contrast to the sweet mango. 

INGREDIENTS

This is what you need for 2 servings:

  • 2 large swai fillets
  • 2 cups mango, cubed
  • 2-3 medium potatoes, peeled
  • 4 roma tomatoes
  • S&P, seasoning
