herring with mayo

Herring is very popular in the low-lands of Flanders and Holland, and also with the immigrants who came to the US. This little snack is quite simple to prepare and can easily be modified into a herring mayo salad.

With all the sugar they put in the herring here in the US, I do not really like this combination. Also, regular commercial mayonnaise is not formulated to withstand the high acidity of pickled herring and will get watered down very quickly. That looks messy, and tastes unpleasantly oily.

The 'dressing' in the commercial rolmops (Pic7) is different than 'home' mayo, stays firm.

INGREDIENTS

This is what you need per serving:

  • 2 slices bread, toasted
  • 1-2 pickled herring fillets
  • mayonnaise

Use a different method if a larger amount of herring mayo salad is needed:
