Italian Halibut

Halibut is the largest known flatfish The Pacific halibut can reach up to 500 lbs., the Atlantic to 700 lbs. The meat is white and flaky, imo rather similar in texture to cod but considerably more expensive. ($30/lb. in 2019)

The fish has nothing to do with Italy. The title is derived from the Italian dressing I used. The vinegar in that dressing gives the dish a pleasantly sharp flavor.
