oven-baked Dungeness crab & spread

I don't always steam my crab. ☺

This is what you need for each serving:

Quick-thaw the crabs in the sink under running water.
Lift the shell off the body.
Remove the gills and clean out the center body cavity.
Rinse thoroughly.
Stuff the body cavity with shredded cheese.
Bake for 20-30 minutes at 350 ºF.
Remove from the oven and serve.
Be careful, the crab shell will be scalding hot.
Enjoy.

I love this even more than digging at those crab shells. The work is done, enjoyment begins.

Remove all shell and cartilage pieces from the meat.
Mix 2 parts mayo with 1 part tomato ketchup. (salsa rosa)
Optional: add a splash of whiskey, cognac or other liquor and heavy cream to taste.
Whisk it all together.
Add just enough to the crab meat to not make it soggy.
Spread out over a croissant.
Serve and enjoy.
