green chile cod stew


This is a very simple recipe that is a variation of enchiladas with a very different twist. I used all frozen ingredients, but you can use fresh ones if they are available. Use a firm white fish like cod loins or halibut...


This is what you need for 4 servings:

  • 1 lb. green chile, spiciness as desired
  • ½ lb. spinach, chopped
  • 4 cod loins
  • ½ lb. shoestring fries
  • 2 cups grated melting cheese mix.
    I used Mexican 4-cheese mix.
