shrimp, chicken casserole with spinach, bell peppers, poblano peppers


An amazing dish that apparently was never posted to my Facebook page or my website until I was updating my website during the 2020 Covid-19 quarantine.


This is what you need for 4 servings:

  • 1 lb. salad shrimp, tail-off, cooked
  • 1 lb. chicken breast, cooked
  • 1 lb. baby spinach, cooked whole
  • 1 red, 1 green large bell pepper
  • 4 large poblano peppers, roasted, peeled
  • 2-3 garlic cloves
  • 3 cups grated melting cheese
    here: Mexican blend + quesadilla
  • 2 cups heavy cream

Pic12: add cream & cheese mix to the bowl + inside the peppers
