Cutting rabbit stew meat works better with half of a large 4+ lbs. rabbit than a whole 2 lbs. one. The muscles are bigger. Because the pieces are so small, cooking times are considerably shorter than pot roast or soup.

Rabbit is so versatile. There are so many different things you can do with it. This recipe uses diced rabbit meat. If rabbit is not available, substitute with chicken. It is a slightly more elaborate ingredient list, but feel free to omit some things if you like to keep it simple.

INGREDIENTS

This is what you need for 4 servings:

  • 2 lbs. rabbit
  • 4 slices of bacon, thick-sliced
  •  1 large onion, quartered
  • 1 cup dried prunes
  • S&P
  • 2 bay leaves

optional:

  • 2 cups chopped bell pepper
    in color mix if available
  • 1 cup sweet corn kernels
  • ½ cup of long-grain rice

  • 1 onion
  • 3 medium zucchinis
  • 3 carrots

optional:

  • 1 cup corn kernels, cooked
