oven-roasted whole rabbit

This is a small 2-lb rabbit, purchased from Wholey's. I used to raise rabbits myself 2014-2015, now I have to buy them online and have them shipped in overnight.

This was a lazy cooking day. I rubbed the rabbit with olive oil and a coffee spice rub, stuck it in the oven @ 350 ºF. for 60 minutes and almost forgot about it.

Oven-roasting is very different from the rabbit stew that I usually make, but this one was a solid frozen block when I started, that wouldn't fit in any but the biggest pot I have, so I did something else with it. It turned out quite nicely. And because it was lazy day, I just poured a jar of applesauce with it.

The spice rub seems to be a mixture of taco-chile-spices and ground coffee. It came 'free' with my bison order. I had never seen this before, but since I had it anyway, I could just as well give it a try. Nod bad at all.

  • seasoning of your choice
  • applesauce
