rabbit braised in red enchilada sauce

Flemish recipe, rabbit with prunes & potatoes, with a Mexican twist.
If the sauce isn't too spicy, this is very similar to the original recipe.

This was one of the Covid-quarantine purchased rabbits.

INGREDIENTS

This is what you need for 3-4 servings:

  • 1 medium rabbit, 2-3 lbs.
  • 2 cups dried prunes
  • 4 medium potatoes, sliced
  • 1 can red enchilada sauce / red chile sauce
  • S&P
