INGREDIENTS

This is what you need for 2 servings:

  • 1 loin piece, halved across
  • 1 carcass (ribcage + spine)
  • 2 tbsp. olive oil
  • 2 medium onions, peeled, whole
  • 2 medium potatoes, quartered
  • 3 carrots, sliced

optional:

  • 1 egg

Directions

  • Brown the rabbit pieces on all sides in olive oil.
  •  Add 1 qt. water. Bring to a boil. Reduce heat, cover and simmer over low heat for 60-90 minutes.
  • Add the remaining ingredients except the eggs.
  • Add water to nearly cover all.
  • Bring to a boil, reduce and simmer for 20-30 minutes.
  • Optional:
    • Add a lightly-beaten egg to thicken the sauce.
  • Serve immediately.
  • Enjoy.
