I allowed a few summer squash to fully mature on the vine, for the purpose of harvesting the seeds for the next growing season. I did get the seeds, then was reluctant to just discard the shell.

After trying this, I do not recommend mature summer squash for consumption.
The flesh is thin, dry and practically flavorless.

Winter squash (butternut, spaghetti, acorn, etc.) would do a lot better for this. Use the same recipe.

INGREDIENTS

This is what you need for 2-4 servings:

  • 1 rack pork spare ribs, 3-4 lbs
  • veggie skewers, 1 per person
  • 1 mature grey squash
