White asparagus is like a white elephant in the New Mexico desert; extremely rare and by the time they get here, they're not in a very good condition anymore. I made this with canned white asparagus before I started recording my kitcheneering adventures and even those are difficult to find nowadays. I borrowed these internet pictures instead.

Don't forget to peel raw white asparagus. You also have to cook them first. And because asparagus is so thin, stack a few together in a single ham roll.

Use the same method as endive ham rolls.

b. ham rolls with green asparagus and sautéed lettuce

This is practically the same as above, with green instead of white asparagus and some extra sautéed lettuce.

INGREDIENTS

This is what you need for 6 servings:

  • 6-12 slices ham
  • 1 can green asparagus
    OR cook fresh asparagus spears
  • 1 lb. lettuce / spinach or mix
  • 2 cups Mornay sauce
  • 1 cup grated melting cheese
  • 1/2 cup breadcrumbs

c. cold dish asparagus ham rolls

A variation on the above, served as a cold dish. This is a pretty popular item for more formal dinners. It looks good, tastes god and is quick and easy to make. Use mayo instead of béchamel or Mornay sauce.

INGREDIENTS

This is what you need for 4-6 servings:

  • 1 can green asparagus
    OR cook fresh asparagus spears
  • 6 slices ham
  • mayo
