Cueritos are pickled pork rinds, a Mexican favorite. They come in mild and in spicy versions.
Not to be confused with chicharrones, also pork skin, but deep-fried.

Marielos likes them a lot (not the hot ones, of course) and I try to keep a jar in the house, that she can indulge her cravings any time. Be sure to refrigerate after opening the jar.

I don't much care for them, so Marielos prepares this mostly for herself as an afternoon snack. As a result, I don't get much opportunity to take pictures, but what she does looks pretty much like Pic1. Think pico de gallo with cueritos.

No need for guilty cravings. This is a very low-calorie dish.

INGREDIENTS

This is what you need for 2-4 servings:

  • 1 15-oz. jar cueritos (Pic2)
  • 3 roma tomatoes
  • 1 medium onion
  • 1 tbsp. chives or green onion
  • Cholula hot sauce
  • hot peppers (arbol, serrano, jalapeno)
  • Mexican sour cream
  • 1/2 cup vinegar or 4 limes
